Puff Pastry:
Ingredients:
½ cup water
⅓ cup whole milk
½ cup unsalted butter
1 tbsp sugar
Pinch of salt
1 ¼ cup plain flour
3 large eggs

Preheat oven to 350°F
In a saucepan, heat water, milk, butter, sugar, and salt on low heat until butter has melted. Remove from heat once mixture reaches boiling
Sieve flour into the saucepan and mix quickly until a dough formed and not tacky. You want it to look like mashed potatoes.
Transfer dough into mixing bowl, and mix with a paddle on low speed to cool the mixture down, about 2 minutes
Replace paddle with a whisk, and beat eggs one by one, on low speed until mixture is well combined
Transfer dough mixture into a piping bag, and start piping an “ice cream “swirl from the bottom up, then add a V on top for the tails. Smooth and shape the dough with a wet brush until it is flast.
Bake for 14 minutes at 400°F, then reduce the temperature to 325°F, and continue to bake for 20-25 minutes. Make sure to keep an eye on it occasionally due to oven differences
Remove from oven and let it cool
Once cooled down, create a hole at the bottom of the puff, and pipe vanilla bean pastry cream
Decorate accordingly.

Vanilla Bean Pastry Cream
Ingredients:
1 large whole egg
2 large egg yolks
½ cup sugar
¼ cup cornstarch
Pinch of salt
2 cups whole milk
1 Vanilla bean or 1 tbsp vanilla bean paste
¼ cup cold butter cubed
Add all egg, egg yolks, sugar, corn starch, and salt into a mixing bowl. Whisk completely for about 6 minutes until a pale yellow cream is achieved
Add milk and vanilla bean into a saucepan, and heat over medium high heat, occasionally stirring until a slight simmer is achieved, remove from heat
Add hot milk into egg mixture slowly and bit by bit and whisk thoroughly.
Incorporate the rest of the milk in parts while mixing, then pour mixture back into saucepan
Heat over medium-low and continuously whisk until thicken, about 4 minutes
Remove from heat and let cool, about 5 minutes
Add chunks of butter, whisk, then strain with a strainer
Set in fridge for about 3 hours

Marshmallow Fondant Ribbons (Recipe from Rosanna Pansino)
Ingredients:
½ bag of marshmallows
3 cups of powdered sugar
1 ½ tablespoons of water
Purple gel food colouring
In a heatsafe bowl, place marshmallows and pour water all over. Coat well and evenly with spatula
Heat for 3 minutes in intervals of 30 seconds, mixing well in between each heating. Make sure no more lumps are visible
Sift half the powdered sugar into another bowl, creating a divot in the center after
Pour in marshmallow mixture, and sift the rest of the powdered sugar on top
Knead with hands until a taffy like consistency is achieved
**Use shortening to make it less sticky on the hands if needed
Add a drop of food colouring, and start working it in until appropriately blue/purple
Wrap up tightly in plastic wrap for later use

Kelp Kohakutou Jelly
Ingredients:
1g Agar agar
35g water
60g sugar
Any flavoring of your choice, we used orange
Purple/blue food coloring
Place water in a saucepan and gently combine agar agar powder. Let agar agar bloom in water for 5 minutes
Bring to a simmer and gently stir for 2-3 minutes
Combine sugar and cook additionally for 2-3 minutes
Remove from heat and add in flavors
Using a heatproof dish, lightly oil the base and pour in mixture
Add in food color on top and swirl to desired design
Fridge to set for 2-3 hours
Carefully remove jelly from container and cut to desired shape, in our case a long kelp with some lines going down the center
Place jelly on parchment sheet, cover, and let cure in room temperature for 2-3 days until harden
