Beef Tenderloin IS BORING! Thats why I am kicking this one up a notch and stuffing it and smoking it on my Lone Star Grillz Pellet Grill! This recipe is super juicy, tender, and INCREDIBLY delicious! Now let's check out this smoked and stuffed beef tenderloin!

Now for this, its nice to start with a GOOD piece of meat. I prefer Certified Piedmontese Beef, and this is the one that I would choose: https://bit.ly/3StShMJ

For the Stuffing, here is the recipe:
4 slices bacon, chopped
2 tablespoons butter
2 shallots, peeled, thinly sliced
1 chopped mushrooms
1 cup baby spinach, coarsely chopped
1 cup panko bread crumbs

several slices of cheese, swiss or provolone.

Now for this smoked beef tenderloin, we will be using my Lone Star Grillz 20x42 Pellet Grill, but you can use any pellet grill or smoker that you'd like: Camp Chef Woodwind Pro, Traeger, Yoder Smoker, Pit Boss Pellet Grill, Offset smoker, Vertical smoker, WHATEVER!

For this I will be smoking this stuffed beef tenderloin at 225F until the rub sets up. For me that was at around 90F internal temperature. Now we start gently drizzling garlic butter on the beef tenderloin and continue smoking until it reaches around 112-115F internal temp. NOW we kick the Lone Star Grills Smoker up to 450F and open up that sear plate for a nice reverse sear. Now we sear until about 128F internally and remove from the pellet smoker. Let rest covered for 15min and carefully slice!

This is LITERALLY the most delicious beef tenderloin that I've ever eaten! And it was super simple!
