The plum glaze on these ribs tastes incredible. Season your ribs with your favorite BBQ rub and smoke them until they reach your desired level of tenderness.

I went with a rack of Spare Ribs (St Louis Cut) but you can do this with baby back ribs as well.

Smoker temp was between 250 and 275 degrees F and the total cook time was about 4 hours.

Cook the pork ribs until they are nice and tender. This happens somewhere around 190 to 200 degrees F.

For the Plum Glaze:
Take three plums and smoke them with the ribs for about two hours. Transfer them to a covered baking dish and continue to cook them at 350 degrees F for about an hour or until they collapse until the gentle pressure of a fork.
Remove the seeds and puree in a blender with a tablespoon of apple cider vinegar.

Brush the plum glaze on the ribs and put them back in the smoker for about 20 minutes before slicing and serving.
