Ingredients for making pizza pockets:
1 cup all-purpose flour (extra for kneading)
1 package pf pizza yeast
1 1/2 teaspoon sugar
3/4 teaspoon salt
2/3 cup very warm water
3 tablespoons olive oil
Egg wash
Grated parmesan
Your favorite pizza toppings, we used:
Tomato sauce
Pepperoni slices
Green peppers
Mozzarella cheese

Instructions for making homemade pizza pockets:
- Starting with the dough, combine 1 cup of all purpose flour with one package of pizza yeas, 1 1/12 tsp of sugar, 3/4 of a tsp of salt, 2/3 of a cup of very warm water and 3 tbsp of oil
- If you use the end of a a wooden spoon to mix everything together it will be easier to clean off and you’ll waste less dough that would be stuck to the spoon
- Once that’s well blended, add 3/4 more flour and use your hands to bring a rough dough together then transfer to a clean working surface and knead for about 4-5 minutes until the dough is smooth and elastic
At this point the dough needs to rest so transfer it to a clean bowl and drizzle with a little olive oil, rolling the dough around to ensure all sides get covered
- Now cover and let sit at room temperature for about 30 minutes after which the dough will have doubled in size
- Next transfer the dough to a clean and lightly floured working surface then use a bench scraper or knife to divide the dough into 4 equal portions
- Form a portion into a ball by tucking the edges behind then gently rolling it in your hands then on a clean working surface
- Gently flatten the ball into a circle with your fingers then dust with a little flour and roll with a rolling pin
- To help it keep a circular shape, rotate the dough 45 degrees after every couple of rolls
- Once you’ve reached your desired thinness, it’s time to start filling
- For this you can use whatever you like but we went some classic pizza toppings like tomato sauce, pepperoni, diced green pepper and of course a big handful of mozzarella
