Fish Fillet with Black Bean Sauce

Fermented black beans also known as tausi can be bought either in brine or dried. I used the dried version in this recipe but you can also use the one in brine. Just drain the brine and wash with water to remove the salt as it can be really salty and ruin the dish. The fish I used is dory which is quite common here but you can substitute with any white fish fillet in your area.

There is just enough sauce to coat the amount of fish I used but if you want it "saucy", feel free to double the sauce recipe. This sauce recipe can also be used with pork, chicken, tofu, and combinations.
