Today I am sharing a beautiful family Tree Lighting Tradition and of course some delicious recipes too ! Every year me and my family attend this Tree Lighting located in one of The Vanderbilt Estate Mansions located here in Centerport , NY! Chocolate Cranberry Magic Bars

Ingredients:
1 cup of cold salted butter cubed
1/3 cup of powdered sugar
1 1/4 cups all purpose flour
12 ounces of semi sweet chocolate chips
2/3 cups of dried cranberries
1 cup unsweetened flaked coconut
1/2 cup of chopped pecans
1 14 oz. can of sweetened condensed milk


Instructions:

Preheat oven to 350°
In a bowl add butter, powdered sugar and flour and combine together with a pastry cutter or fork.
Keep cutting in the butter until you have pea sized butter pieces. This takes a little time!
Press into a greased 9 x 13 pan. Bake for 12 minutes.
When done sprinkle 3/4 of the chocolate chips, the coconut, the pecans and the remainder of the chocolate chips onto the base. Pour the sweetened condensed milk over the toppings evenly and bake for 18 minutes.
Let the bars cool completely and cut into squares.

Authentic Meatball Soup

Ingredients:

3 carrots chopped
3 celery stalks chopped
1 large onion chopped
12 cups of chicken broth
6 chicken thighs (cook in 4 cups of water for one hour on simmer)
1 Chicken Bullion cube
1/4 cup of fresh chopped parsley (Italian style)
2 tbsp. olive oil
2 eggs beaten
2 tbsp. of Parmesan cheese
1 pound cheese tortellini
6 oz. of fresh spinach


Meatballs:
1 pound of ground beef
1 cup of seasoned fresh breadcrumbs
1/2 cup of grated Parmesan cheese
Salt and Pepper to taste
1 egg beaten
1 cup of warm water
1 large clove of minced fresh garlic




Instructions:
Cook chicken thighs. When done, remove from the bone and slice or chop.
Make meatballs by mixing together all the ingredients and shape them into 1 in. diameter meatballs and set aside onto a baking sheet.
To make the soup sauté all the vegetables, except the spinach in a 5 Quart Dutch oven with the olive oil over medium heat.
After five minutes add all the broth including the chicken thigh broth too! And bullion.
Let it come to a boil.
Add all the raw meatballs and sliced chicken. Give it a good mix and lower to a medium low flame.
Add the fresh parsley and cook for 1 1/2 hours. Stirring occasionally.
Before serving add the fresh spinach. Mix the beaten eggs with the Parmesan cheese and slowly add that also!
Serve with the tortellini on the side or add to the soup.

Slow Cooker Apple Cider


Ingredients:
8 cups of apple juice or cider
1/4 cup of brown sugar
4 cinnamon sticks
1 tsp. of whole cloves
1 star anise optional
1 orange sliced
Garnishes: Cinnamon sticks, sliced apples, oranges and cranberries.


Instructions:

Place the Apple juice, brown sugar, cinnamon sticks, cloves, star anise and orange in a slow cooker.
Cook on high heat for 1 1/2 hours or low for 4 hours. Remove whole spices and orange slices. Serve, garnished with cinnamon sticks, apples, oranges and cranberries !
