This chicken achari dish, or achari chicken hails from southern India. Achar is a pickle and I'm using some of Patak's mixed pickle for my version. If you've never heard of Patak's, they are, as far as most people are concerned, the best company to produce authentic Indian spice pastes and pickles among other produce. I've used them for years and can thoroughly recommend them. The pickle adds a sharpness to the curry and gives it a distinctive flavour not to be missed. The use of Kashmiri chilli powder adds a deep red colour to the dish with a hint of smoky flavour. It's not a hot chilli powder, so it doesn't add too much heat to the spicy pickle.

Ingredients
2 chicken breasts
2 small to medium onions
5-6 cloves of garlic
2 tbsp vegetable oil
A good pinch of salt
1 thumb-sized piece of ginger
2 pieces of cassia bark or cinnamon sticks
2 bay leaves
250ml of passata or 1/2 tin of chopped tomatoes
200ml water
1 1/2 tbsp Patak's mixed pickle
Seeds of 6 cardamom pods
5 small green chillies
1 tsp turmeric
2 tsp Kashmiri chilli powder
1 tsp curry powder
2 tsp coriander powder
1 tsp cumin powder
1/2 tsp garam masala
A good pinch of kasuri methi (dried fenugreek leaves)
A good handful of chopped fresh coriander (cilantro)
