Mexican Wedding Cookies are perfect for those of us who like a little salty with our sweet! So well-balanced, buttery, and nutty, with a melt-in-your-mouth consistency. The powdered sugar coating makes them totally irresistible and the pecans add so much richness to the flavor.

These cookies seriously only take about 15 minutes to make. You heard me, 15 minutes! They require VERY little effort and the ROI is sky high! The ingredients list is short and simple, without any hard-to-come-by items, plus, these Mexican Wedding Cookies freeze and thaw beautifully!

All of these things on top of the fact that they are so cute and festive make them perfect for giving as a gift during the holidays. There is NO reason to add extra stress when you could make something as easy and delicious as this. The holidays have enough to keep you busy without the added weight of a complicated recipe!

What You'll Need:
2 cups all-purpose flour
1 ¼ teaspoon fine sea salt
1 cup unsalted butter room temperature (do NOT use salted butter)
½ cup granulated sugar
1 teaspoon pure vanilla extract
1 cup ground pecans
1 ½ cup confectioners (powdered) sugar

How to make Mexican Wedding Cookies:
You will start off by mixing the flour and sea salt in a medium bowl. Set this aside for now and move on to your wet ingredients.

To cream the butter and sugar, simply place them in the bowl of your stand mixer, fit it with the paddle attachment and mix on medium-high for about 3 minutes. If you don’t have a stand mixer, it’s all good! Just use a large bowl and a handheld mixer instead. Add in your vanilla extract and give it one more mix. 

Now, with your mixer on low, add the dry ingredients slowly and mix until incorporated. Then, mix in the ground pecans.

Roll the dough into balls, using about a tablespoon per cookie. Place the dough balls about 1 ½ inches apart on a parchment paper lined baking sheet and bake for 15 minutes at 325°.

Allow your Mexican Wedding Cookies to cool completely before placing them (about a dozen at a time) in a large, zip-top bag along with the powdered sugar. Shake it gently until the cookies are well coated. Enjoy!
