Chocolate Oatmeal bars are chewy on the bottom with a thick fudgy layer in the middle and more crunchy topping on top!

Ingredients:
1/4 cup butter, salted
6 Tbsp flour
1/2 cup quick cooking oats
1/2 cup brown sugar
1/8 tsp bakiing powder,
1/4 tsp baking soda
pinch of salt
1 cup chocolate chips, semi sweet
2 Tbsp butter, salted
1 egg
1/4 cup flour
1/4 cup brown sugar
1/4 tsp salt

Directions:
Preheat oven to 325 degrees F.
In a medium size bowl, combine 1/4 cup butter, 6 Tbsp flour, 1/2 cup oats, 1/2 cup brown sugar, 1/8 tsp baking powder, 1/4 tsp baking soda and pinch of salt.
Mix to combine.
Remove 1/2 cup and 2 Tbsp of mixture and set aside.
Press remaining mixture into a 9 x 5 loaf pan that has been greased or lined with parchment paper.
Bake this layer for 7-8. minutes. Cool Completely.
In a medium bowl combine 1 cup chocolate chips and 2 Tbsp butter.
Melt in microwave or place in small sauce pan and melt on stovetop.
Stir in egg.
Add in 1/4 cup flour, 1/4 cup brown sugar, 1/4 tsp salt and mix to combine.
Pour chocolate mixture over cooled crust.
Sprinkle with reserved oatmeal mixture and bake for 30 - 35 more minutes.
Cool bars to room temperature or for at least 1-2 hours.
Cut into bars and enjoy!
