A vegetable/legume that is often overlooked is the Edamame and today we are going to cook them Italian style. Very healthy and delicious, the edamame are very easy to cook and are readily available in your local store's freezer section, which makes them very convenient too! I hope you give them a try as they are nutritious and delicious :)

Edamame – Italian style
Ingredients
• 454 grams (I lb.) Edamame (shelled)
• 6 TBSP extra Virgin Olive Oil (EVOO)
• 1 clove of garlic, minced.
• 1 small onion (about ½ cup) (or medium onion if preferred) sliced thin, then diced
• Salt to taste
Process
• Put EVOO in a pan and add the garlic. Sauté for 30 seconds on medium heat.
• Add the onions and continue to sauté on medium heat for 3 more minutes, until onions are soft.
• Add the Edamame and toss to combine - get them all coated with your EVOO, garlic and onion.
• Sauté on medium heat for at least 5 minutes.
• Add salt to taste and enjoy 😊
