Savor the hearty goodness of our Potato Medallions with creamy beans and cabbage. Crispy-coated potato medallions meet a creamy blend of white beans infused with miso and smoked paprika. Tossed with sautéed cabbage, carrots, and onions, finished with a zing of lemon juice and fresh parsley. A comforting and flavorful meal for any occasion.

Instructions:
Peel and boil potatoes
Drain and mash, mix with salt, chickpea flour and yeast flakes
Form small balls and coat in breadcrumbs
Fry in olive oil
Dice onion, carrots and garlic
Finely dice or mandolin cabbage
Fry onion and carrots in olive oil until translucent
Add garlic and cabbage
Fry until cabbage is wilted
Blend one can of white beans
Add blended beans and second can of beans with liquid
Add miso, 1 tbsp of smoked paprika and bring to a simmer for a few mins
Juice lemon and finely dice parsley
When done, add parsley and lemon juice
Add pepper and salt according to taste
Time to serve!

Quarter head of white cabbage
2 carrots
Onion
Garlic
Parsley
Lemon
60gr chickpea flour
2 cans of white beans
2 Tbsp of miso
Yeast flakes
Smoked paprika
Breadcrumbs
Salt
Pepper
Olive oil
