If you are a fan of Carrot Cake this recipe is a MUST MUST try!! It is so moist it literally sticks to your fork! You can customize it your way whether you want nuts, coconut or raisins!
Its the perfect Dessert for Easter or that Special Birthday Person in your life!!
Ingredients:
6 C grated or ground peeled carrots
1 C light brown sugar
4 large eggs
4 tsp cinnamon
1/4 t nutmeg
1 C granulated sugar
1/2 C Vegetable oil
1/2 C applesauce
1 C DRAINED crushed pineapple
2 t vanilla
3 C flour
1 tsp salt
1 1/2 t baking soda
Additions: 1/2 C pecans or walnuts. 1/2 C coconut, 1/2 C raisins
Cream Cheese Frosting:
2 sticks softened butter
2 pkgs softened cream cheese
8 C powdered sugar
2 t vanilla
1/4 t salt
