RECIPE: Smoky Glazed Asparagus by LivingTheAlleyWay

Ingredients:
- 1 pound (or 2 bunches) thick fresh asparagus, trimmed
- 1/2 cup mayonnaise (we use plant-based mayonnaise)
- 1/4 cup extra virgin olive oil
- juice and zest of one fresh lemon
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon smoked paprika
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon ground cumin
- a few drop of liquid smoke (optional if cooking on the grill)

Instructions:
- either start the grill - OR - preheat oven to 425 degrees
- if roasting in the oven, line a large cookie sheet with parchment paper
- Add the mayonnaise, oil, lemon juice and zest, garlic powder, onion powder, garlic, paprika, salt, cumin, and liquid smoke (if using) to a 9 x 13 glass pan
- Whisk well to fully incorporate
- Add the asparagus and toss well to fully coat
- Let the asparagus marinate for about 30 minutes
- Lay the asparagus on the parchment lined cookie sheet so that they do not touch
- Roast in the preheated oven for approximately 20-25 minutes until tender and blistered
