The Cherubs Kiss:
Rim a glass with sugar
Build drink in shaker
2 dashes Peychaud’s Bitters
.25 oz. or 7 ml. Creme de Menthe (Leroux)
.75 oz. or 22 ml. Lime Juice
.5 oz. or 15 ml. Passion Fruit Syrup**
2 oz. or 60 ml. Gin (Tanqueray)
Add ice and shake
Strain into glass
Garnish with mint sprig

**Passion Fruit Syrup:
150 grams frozen passion fruit chunks
150 grams sugar
75 ml water
Heat in a pan until sugar is dissolved
Strain into bottle

The Cherubs Kiss V2:
Rim a glass with sugar
Build in shaker
5-10 fresh mint leaves
6 dashes Peychaud’s Bitters
.5 oz. or 15 ml. Lime Juice
.75 oz. or 22 ml. Passion Fruit Syrup
2 oz. or 60 ml. Gin (Tanqueray)
Add ice and shake
Strain into glass
Garnish with mint

The Drink:
Build in shaker
.5 oz. or 15 ml. Orgeat
.75 oz. or 22 ml. Pineapple Juice
.75 oz. or 22 ml. Lime Juice
1 oz. or 30 ml. Bourbon (Wild Turkey 101)
1 oz. or 30 ml. Jägermeister
Add ice and shake
Open pour
Top with crushed ice
Garnish with lime boat, cherry and a float of overproof rum (Plantation O.F.T.D.)

The Drink V2:
Build in shaker
1.25 oz. or 37 ml. Lime Juice
.5 oz or 15 ml. Pineapple Juice
1 oz. or 30 ml. Orgeat
1.5 oz. or 45 ml. Bourbon (Wild Turkey 101)
.5 oz. or 15 ml. Overproof Rum (Plantation O.F.T.D.)
Add ice and shake
Open pour
Top with crushed ice
Garnish with lime boat and cherry
Spritz with absinthe

Nakatomi Sour:
Build in shaker
4 dashes Angostura Bitters
.75 oz. or 22 ml. Raisin-Fig Syrup**
1 oz. or 30 ml. Lemon Juice
.5 oz. or 15 ml. Averna Amaro
1.5 oz. or 45 ml. Rye Whiskey (Whistle Pig)
Add ice and shake
Strain into glass
Garnish with flamed lemon peel

**Raisin-Fig Syrup
150 grams dried figs
250 grams raisins
1 or 2 cardamom pods
1 liter of water
500 grams of sugar
Combine in a pot
Bring to a boil
Boil until it reduces by half
Strain into bottle
