STICKY TOFFEE PUDDING. This is one of my favourite desserts. This is dark, dense, decadent soft sponge made with dates. It has a nice caramel flavour and topped of with a sweet sticky caramel sauce. You can serve this with ice-cream or custard. Today I'm serving it with my homemade vanilla ice-cream.

Recipe

Sponge:

Butter 60 grams
Demerara sugar 180 grams
Treacle 60 grams
Golden syrup 30 grams
Egg 60 grams
Self raising flour 210 grams
Dates 210 grams
Hot water 300 grams
Bicarbonate soda 15 grams

Bake at 160 degrees Celsius for 25-30 minutes

Toffee sauce:

Double cream 120 grams
Butter 60 grams
Muscovado sugar 60 grams
Treacle 60 grams
Golden Syrup 30 grams
