today am sharing this very satisfying one pot lentil and rice recipe, a dish that's so popular across many cultures especially in Middle Eastern, Indian and African cuisines.
My version of this classic recipe includes carrots and red cabbage to make it more of a complete dish.

Note: You can substitute dates with raisins, cranberries or just any fruit of your choice. They add sweetness and flavor contrast to the dish.

INGREDIENTS
2 cups Lentils ( used green/ brown ) picked through , washed and soaked
2 cups basmati rice, washed and soaked
4 tbs Olive oil
1 Large Red onion, peeled and thinly sliced
1 tbs Garlic , chopped
1 tbs Ginger, mined
1 tsp Tomato paste
1 tsp Oregano, dry
1 tbs Coriander
1 tsp Cumin
1 tsp Paprika
Pinch red pepper flakes or cayenne
1 tsp red wine vinegar or Lemon juice
Salt and pepper to taste ( salt added towards the end )
1 small red cabbage ( or half of regular size )
1 medium size carrot, peeled and julienned / match sticks
6 cups water,, add more if needed during cooking
1 cup cilantro or parsley, scallions and mint for garnishing
