Rye BREAD without kneading is a delicious everyday bread for sandwiches, I especially love to prepare it for the festive table, for Christmas and New Year, with butter and red caviar. Recipe "RYE BREAD in the oven":

Ingredients:
330 g of water (room temperature)
300 gr 1st grade flour
80 gr peeled rye flour
6 g fresh yeast (pressed)
30 g of olive oil
20 grams of flax seeds
7 grams of salt

Preparation:
0:00 Let's start making BREAD.
0:15 Stir in oval or rectangular yeast (6 g) in water (330 g).
0:27 Add olive oil (30g) and stir.
0:33 Add 1st grade flour (300 g), peeled rye flour (80 g), salt (7 g) and mix until smooth.
1:09 Cover with cling film and rest at room temperature for 20 minutes.
1:14 Wet hands in water and stretch and fold the dough for the first time.
1:40 Cover with cling film and rest at room temperature for 20 minutes.
1:50 Wet hands in water and do the 2nd stretch and fold.
2:11 Cover with cling film and rest at room temperature for 20 minutes.
2:22 Soak your hands in water and do the 3rd stretch and fold.
2:45 Cover with cling film and rest at room temperature for 40 minutes.
3:07 Transfer the dough to a well-floured towel.
3:26 Divide and support the dough on both sides, cover with a towel and let stand at room temperature for 30 minutes.
4:13 Carefully transfer the dough to the parchment paper.
4:35 Quickly drag the parchment with the dough onto a preheated baking sheet in the oven to 220 C and create steam (pour 100 ml of water into a container heated in the oven (cast-iron pan, baking sheet) and quickly close the oven door).
4:39 Bake the ciabatta with steam for 10 minutes. In 10 minutes, the water should evaporate, but it is better to release the steam by opening the oven door for a second. Then bake the ciabatta for another 15 minutes until golden brown.
