食譜:
麵包6個
1杯=200ml

波蘭種:
高筋麵粉100克(1/2+1/3 杯)
水100克(1/2杯)
酵母1克(1/4小勺)

主麵團:
133克*6個

波蘭種200克(全部)
高筋麵粉400克(3+1/3杯)
水180克(12大勺)
白糖15克(1大勺)
鹽6克 (1小勺)
酵母4克(1小勺)
無鹽黃油15克(1大勺)

煮貝果的水:
水1000克(5杯)
白糖50克(3大勺+1小勺)

麵包底:
芝麻

麵包頂部:
無鹽黃油

出爐後表面刷牛奶

烘烤:
烤箱預熱15分鐘
200°C
19~21分鐘

Tips和過程:

波蘭種製作
高筋麵粉100克、水100克、酵母1克、混合均勻,溫暖處發酵30分鐘後到1.5倍大,放入冰箱冷藏隔夜,發酵到3~4倍大。

麵團製作
1⃣️高筋麵粉400克、水180克、酵母4克、糖15克、波蘭種200克,拌勻後加入鹽、無鹽黃油,揉10分鐘
2⃣️鬆弛麵團10分鐘
分割成6個133克重量後滾圓麵團
3⃣️小麵球發酵30~40分鐘,到達體積1.5倍大。
4⃣️擀開成牛舌狀,翻面,讓光滑面朝下、麵片形狀15寬,長25釐米,捲成條後搓長到18~22cm。
一端切2cm小口,包裹上另外一端。
讓貝果發酵到1.5倍大。(大約30分鐘)
提前15分鐘開始預熱烤箱
5⃣️1000克水、50克白糖、水煮到開始冒小泡,放入貝果正反面每面煮20~30秒。先煮頂部後煮底部)
6⃣️煮好的貝果,濾水後底部沾芝麻,放入烤盤,貝果頂部放無鹽黃油。
7⃣️200°C烘烤19~21分鐘,出爐後後表面刷牛奶。

15g unsalted butter (1 tablespoon)

Water for cooking bagels:
1000g water (5 cups)
50 grams of sugar (3 tablespoons + 1 teaspoon)

Bread bottom:
Sesame

Bread topping:
unsalted butter

Brush the surface with milk after taking it out of the oven

bake:
Preheat the oven for 15 minutes
200°C
19~21 minutes

Tips and process:

Mix 100 grams of bread flour, 100 grams of water, and 1 gram of yeast. Let it rise in a warm place for 30 minutes until it reaches 1.5 times its size. Place it in the refrigerator overnight and let it rise to 3 to 4 times its size.

1⃣️400g bread flour, 180g water, 4g instant yeast, 15g sugar, 200g starter, mix well, add salt and unsalted butter, and knead for 10 minutes
2⃣️Relax the dough for 10 minutes
Divide the dough into 6 pieces weighing 133g and roll into round balls
3⃣️Let the small dough ball rise for 30 to 40 minutes until it reaches 1.5 times its size.
4⃣️Roll it out into a ox tongue shape, turn it over so that the smooth side is facing down. The shape of the dough sheet is 15cm wide and 25cm long. Roll it into a strip and lengthen it to 18~22cm.
Cut a 2cm slit on one end and wrap the other end.
Let bagels rise until 1.5 times in size (about 30 minutes)
Start preheating the oven 15 minutes in advance
5⃣️Cook 1000 grams of water, 50 grams of sugar, and water until it starts to bubble. Add the front and back of the bagel and cook for 20 to 30 seconds on each side. Cook the top first and then the bottom)
6⃣️After draining the cooked bagels, dip the bottom with sesame seeds, place it on a baking sheet, and put unsalted butter on the top of the bagels.
7⃣️Bake at 200°C for 19 to 21 minutes. Brush the back surface with milk after taking it out of the oven.
