Sweet way to fix the bread with chickpea. Great for home, picnic, camping, and nutritious simple breads.

Chickpea Cream Bread

Filling:

2 cans (15.5 oz) chickpeas
¼ c turbinado sugar
1 tsp stevia
1 tsp coriander
¼ tsp salt
1 tsp vanilla

Dough:

2 ¼ unbleached white flour
3 T wheat germ
1/2 tsp salt
2 T turbinado sugar
½ T aluminum-free baking powder
1 c water

FILLING: Wash chickpeas thoroughly and drain all the water. Put chickpeas and remaining ingredients in a food processor, and process until creamy.

DOUGH: In a large bowl, mix unbleached white flour, wheat germ, salt, turbinado sugar and aluminum-free baking powder. Add water in the flour mixture. Mix with a spoon first, then mix with hand. Knead for 1 minute. Adding unbleached white flour as needed. Divide
8 portions. Cover with towel. Let it rest for 20 minutes. Roll out the dough, dust the surface with little flour and some flour on the rolling pin, to make 5 inches diameter.

CHICKPEA CREAM BREAD: Put 2 Tablespoonful filling in the middle of dough, and cover all the way around and seal it. Flatten to make 5 inches circle. Cook them on frying pan on medium-low heat. Turn it over and finish cooking another side until lightly brown. Delicious!
