Chopped Chicken Caesar Sandwich
Caesar Dressing -
1 Clove - Garlic, Minced
5 - Anchovy Fillets, Minced
2 - Free Range Egg Yolks
1 Tbsp - Dijon Mustard
2 Tbsp (30ml) - Olive Oil
100ml - Vegetable Oil
1 Tbsp - Lemon Juice
3 Tbsp (30g) - Parmigiana Cheese
Salt & Pepper
Method -
1. Place all ingredients into a tall jar or container. Blend on high speed with an immersion blender until emulsified. Store in the fridge until ready to serve.
Chicken & Seasoning -
1 Tbsp (20ml) - Olive Oil
2 - Chicken Breasts, Halved
1 tsp (2.5g) - Onion Powder
1 tsp (2.5g) - Garlic Powder
Salt & Pepper
Caesar (Salad) Sandwich -
2-4 - Buns or Rolls of Choice
2 - Baby Cos (Romaine) Lettuce, Thinly Sliced
200g (70oz) - Streaky Bacon
Salt & Pepper
Method -
1. Preheat oven to 180.c - 350.f. Line a baking tray with parchment paper.
2. Lay the bacon on the prepared tray and bake for 12-13 minutes or until it is cooked to your liking. Remove.
3. Place the chicken into a bowl with the seasoning and mix well to combine. Place a pan over medium-high heat. Add olive oil and sear the chicken for 3 minutes on each side. Remove and rest.
4. Chop the lettuce into medium-sized slices before adding all the ingredients except the bread roll and Caesar dressing to the chopping board. Chop everything together into bite-sized pieces. Place into a bowl. Add the caesar dressing and mix to combine. Check seasoning.
5. Toast or leave the buns fresh. Spread with butter (optional) and assemble the buns or rolls with the chopped Caesar mix. Garnish with freshly grated parmigiana reggiano cheese and cracked black pepper. Dig in.
