Today I will show you how to make a delicious dish from tofu which you can serve
instead of turkey. Great for holidays and any occasions!

Ingredients
FOR THE BASE
4 blocks of tofu
1 tsp of garlic powder
1 tsp of salt
2 tsp of Italian seasoning
1/2 tsp of pepper
2 tsp of smoked paprika
1 tsp of liquid smoke

FOR THE STUFFING
1 medium onion
2 sticks of celery
1 box of white mushrooms (8oz)
1 small bag of fresh cranberries
4 cups of Italian bread ( cubed and baked in the oven)
Garlic powder, salt and pepper to taste or more
2 tbsp of canola oil to sauté vegetables

TO MAKE MARINADE
2 tbsp of smoked paprika
1 tbsp of agave
4 tbsp of canola oil
2 tbsp of soy sauce



YOU WILL ALSO NEED CHEESE CLOTH AND COLANDER!

DIRECTIONS
Prepare tofu to make base:
Drain liquid from tofu and break into a small pieces. Place in your blender and pure until smooth.
Cut your cheese cloth in half and place one layer in a colander. You will another half of the cheese cloth to cover tofu.
Transfer your tofu from the blender into a container and add spices and salt with it . Mix it well. Dump the tofu onto the first layer of the cheese cloth and spread it out. Cover up with another layer of the cheese cloth. Place something heavy on it to help the liquid out. Place in a bowl in order for the liquid to drain.
Put in the fridge or at least 2 hours!

In the meantime, work on your stuffing.
Cut mushrooms into a small pieces. Put in a frying pan and let it cook until water evaporates from them. Incorporate previously cut celery and onion into mushrooms. Add oil and let everything sauté until tender.

I the same time, bake previously cut into cubes Italian bread coated in olive oil and spices. Bake at 350 F for 15 minutes.

When vegetables are done, add spice, cranberries and bread with it. Mix all the ingredients well.

Take out tofu from the fridge. Remove the second layer of the cheese cloth from it and save it for later.
Transfer your tofu into a baking pan by grabbing its ends.
Scoop out tofu from the center of the pan leaving a small layer on the bottom of it.
Brush the tofu which was left in the pan with marinade( it’s bottom and side).
Put stuffing in it and cover it with the tofu you just scooped out. Spread it evenly all over . Brush the top of it with marinade.

Now you will need to flip it by using a plate to remove the first layer of the cheese cloth from it.
After removing your cheese cloth, brush it with marinade again. Flip it again using the plate to return to the right position before baking it.
Brush it with marinade if necessary!
Place at 375F and bake for 30 minutes. Remove from the oven , brush it again and put by in the oven for another 30 minutes. Eat it hot or cold.
