This Beef Stir-fry with onions and scallion's recipe is a cooking technique in which ingredients are fried in a small amount of very hot oil while being stirred in a hot skillet. Using a flank steak, cut into a strip bite-size piece. Soaking the meat briefly in a mild baking soda solution and adding some cornstarch to the marinade before quick searing the beef strips in a very hot skillet. That make this recipe super tender stir-fry with the savory flavor of soy mixture. Make this dish extra velvety special.

16 Ingredients

Meat
* 1 pound flank steak, trimmed and cut

Produce
* 1 medium Onions, slice thinly
* Scallions, separate green and white leaves
* 3-4 Garlic cloves, minced
* 1 tablespoon Ginger, grated

Condiments
* 3 tablespoons Soy sauce, divided
* 1 tablespoon Oyster sauce

Baking & Spices
* 1/4 teaspoon baking soda
* 2 tablespoons and 1/2 teaspoon Brown sugar, divided
* 1 1/2 teaspoon and 1 1/2 teaspoon cornstarch, divided
* 2 teaspoons ground pepper

Oil & Vinegar
* 3 tablespoon rice wine vinegar, divided
* 2 tablespoons cooking wine
* 1 1/2 teaspoons Sesame oil
* 3 tablespoons cooking oil, divided

Liquid
* 1 tablespoon and 1/4 cup Water, divided

Steps
1. Using a pound of steak flank, slice and trimmer into bite-sized pieces. Combine 1 tablespoon of water and 1/4 teaspoon of baking soda in a medium bowl. Then add the sliced beef and toss completely. Let this sit at room temperature for 5 minutes.

2. In a first mixing bowl. Combine 1 tablespoon of soy sauce, 1 tablespoon of rice wine vinegar, 1/2 teaspoon of brown sugar and 1 1/2 teaspoon of cornstarch. Whisk to combine all ingredients.

3. Add the soy sauce mixture to the bowl of beef. Mixing then well to coat. Let this sit at room tem
temperature for 10-15 minutes.

4. Next...prepare the onions and scallions. Thinly slice the onions and bring into small container and set aside. Using 6 scallions stalk, slice and cut the green part into 3-inches pieces. And slice the white part into bias and set aside along with minced garlic and grated ginger.

5. In a second small bowl, let's mix another set of soy sauce mixture. Add 1/4 cup of water, 2 tablespoons of soy sauce, 2 tablespoons of cooking wine vinegar, 1 tablespoon of oyster sauce, 2 tablespoons of brown sugar, 2 teaspoons of ground black pepper, 2 teaspoons of rice wine vinegar,
11/2 teaspoons of sesame oil, 11/2 teaspoons of cornstarch. Mix all ingredients and set them aside.

6. Heat up 2 teaspoons of vegetable oil into a non-stick skillet over medium high heat. Add in marinated beef in a single batch layer, cook without stirring for 1 minute. Flip and continue to cook,
stirring occasionally until browned on both side about 1 minute longer. Transfer the cooked beef to a separate plate then cook the rest of the beef adding 1 or 2 teaspoons of vegetable oil.

7. Next is cooking the onions... In the same hot skillet add 2 teaspoons of vegetable oil. Add sliced onions and green scallions, lightly sauté until browned. Stirring occasionally until they are brown
and tender, about 3-4 minutes. Then transfer to a plate.

8. Next...In the same hot skillet add a teaspoon of vegetable oil. Add the white scallions' leaves, garlic and ginger together, sauté until lightly brown. Then add the seared beef and cooked onions to the skillets and stir to combine all the ingredients. Add the bowl of soy sauce mixture to the skillet.
Stir until the sauce is thoroughly coated to the beef and onions. Let the sauce thickened about 30 seconds.

9. Turn off the heat. Ready to serve along with white steamed rice!
