Ingredients:
1 cup besan/gram flour
3/4 cup - 1 tbsp water
2 cardamom pods (cracked)
1 tsp lemon juice
1/2 tsp ghee
Oil for frying
Instructions:
* Prepare the Batter:
* Sieve 1 cup of besan/gram flour.
* Gradually mix in 3/4 cup (with 1 tbsp reserved) until a smooth batter forms.
* Cover the batter and let it rest for 30 minutes.
* Test Consistency:
* Test the batter consistency by dropping one drop.
* Prepare for Frying:
* Before using for the second batch, wash and wipe the strainer.
* Frying:
* Heat oil for frying.
* Fry the prepared batter until golden brown.
* Prepare Syrup:
* In a pan, combine 1 cup of sugar and 1/2 cup of water.
* Add cracked cardamom pods.
* Cook over medium-high heat.
* Add 1 tsp of lemon juice and 1/2 tsp of ghee.
* Cook the syrup for 15 minutes over low heat.
* If the syrup becomes dry, spray a little warm water
* Finish and Serve:
