INGREDIENTS:

500G SHRIMPS
1 TBSP OLIVE OIL
1/4 CUP MINCED SHALLOTS
1 TBSP MINCED GARLIC
1 TBSP MINCE OR GRATED GINGER
1 CUP DICED FRESH TOMATOES
2 TBSP RICE WINE - it can be substituted with Chinese cooking wine or Dry Sherry Wine
Crushed PEPPED
Chopped SPRING ONIONS OR GREEN ONIONS


Recommendations:
-Sauté the tomatoes and aromatics (garlic, ginger, shallots) well until the tomatoes are soft or until the oil turns orange red. It will create a very nice, finger licking good sauce for the Shrimps.
-Cooking Wine is a must for this recipe. Do not skip it. If Rice Wine or Chinese Cooking Wine (Hua Tiao Chiew) is not available in your grocery, Dry Sherry Wine is a perfect substitute.
