Hey everybody! I get asked pretty frequently about how to take a break from brewing, sometimes because someone is going on vacation, but very often because someone's kombucha/jun brewing has gotten out of hand and they need to take a break to catch up and drink everything! It's super easy to take a break, while still maintaining a healthy SCOBY that is ready for the next time you want to brew. You just want to make sure that it has enough food and that there isn't too much SCOBY. Here's what I do to keep my SCOBY nice and healthy while I am taking a break from brewing, along with some ideas for what to do with all of that extra SCOBY!
