AHI TUNA BURGERS W/ LOBSTER MAC AND CHEESE

Ahi Burgers
* Ahi Tune Fillets
* Sesame Oil
* Egg
* Almond Flour
* Diced Jalapenos
* Chopped Green Onion
* Minced Ginger
* Garlic Cloves
* Cilantro
* Soy Sauce
* Sriracha

Asian Slaw
* Veggie Slaw Mix
* Green Onions
* Jalapenos
* Shredded Carrots
* Rice Vinegar
* Chili Sauce
* Honey
* Dijon Mustard
* Garlic Cloves
* Sesame Oil
* Soy Sauce
* EVOO

Sriracha Aioli
* Mayo
* Sriracha
* Lemon Juice
* Minced Garlic
* S & P

1. Cut tuna into 1” pieces; add to food processor
2. Drizzle sesame oil on top; pulse
3. Place chopped tuna in a bowl; combine with all the rest of the burger ingredients.
4. Form patties; chill in the fridge for 20+ minutes
5. While patties are chilling, mix aioli ingredients together
6. Place in fridge to chill until ready to use
7. For the slaw, combine chopped slaw mixture, green onions, jalapeno, carrots, and cilantro in a bowl
8. Heat the rice vinegar, Chili sauce, honey, mustard, garlic, sesame oil, and soy sauce on the stove.
9. Remove from heat; add EVOO and pour onto slaw mixture.
10. Cook tuna patties on flattop until done (3 ½ min per side)
11. Place on bun with slaw and aioli.

Lobster Mac and Cheese
* Cooked and chopped lobster meat
* Dry pasta
* Butter
* Flour
* Onion Powder
* Dry Mustard Powder
* S & P
* Old Bay
* Milk
* Light Cream
* Shredded Cheddar Cheese
* Shredded Gruyere Cheese
* Shredded Parmesan Cheese
* Grated Parmesan Cheese
* Bread Crumbs
* Parsley

1. Combine bread crumbs, melted butter, grated parmesan cheese, and chopped parsley; set aside for topping
2. Cook pasta according to directions on box
3. Melt butter; add flour, onion powder, dry mustard powder, salt, Old Bay and pepper.
4. Combine milk and cream; slowly add to the flour mixture, whisking as you pour.
5. Bring to a boil; reduce heat and simmer 1-2 minutes or until thickened
6. Remove from heat; add in shredded cheese, whisking until smooth.
7. Combine the sauce, pasta, and half the lobster meat.
8. Spread into a pan; add remaining lobster meat on top.
9. Sprinkle topping mixture on top.
10. Bake at 400° for 20-30 minutes, until bubbly and browned on top.
