Recipe for Turkish Pide:

Ingredients for Pide Dough:
1/2 cup warm milk
1 cup warm water
1+1/2 cup semolina flour
1+1/2 cup wheat flour (atta)
1 tsp salt
1 tsp yeast
1 tbsp sugar
2 tbsp olive oil
Instructions:
In a bowl, combine warm water, warm milk, sugar, and yeast. Ensure that the water and milk are warm, but not too hot. Let the yeast proof for 5 minutes.

In another bowl, combine semolina flour, wheat flour, and salt. Add this mixture to the proofed yeast mixture. Mix well. The dough might be very sticky at first.

Knead the dough using the slap and fold technique until it becomes smooth and less sticky. You can check the gluten development in the dough by performing the window pane test. For the window pane test, take a small portion of dough and stretch it thin. If it doesn't tear right away and forms a thin, translucent membrane, the dough is ready.

Cover the dough and let it proof for 2 hours.

Note: If you prefer to use all-purpose flour instead of semolina and wheat flour, you can follow the same steps mentioned above, but proof the yeast in 1/2 cup of milk and add water as required. However, using semolina and wheat flour makes the pide slightly healthier.

Ingredients for Spice Mix:
1 tsp garam masala
1/2 tsp amchoor powder
1/4 tsp turmeric
1 tbsp red chili powder
1 tsp coriander powder
1/2 tsp cumin powder

Ingredients for Makhani Sauce:
1 tbsp oil
1 tsp cumin seeds
1 bay leaf
3-4 cloves garlic
1-inch ginger
1 medium onion
4-5 tomatoes
1 tsp sugar
Salt to taste
1 tbsp Spice Mix (as prepared above)
3 dried Kashmiri red chilies
Water as required
1 tbsp butter
1-2 tbsp fresh cream
1 tsp kasuri methi
Instructions:
In a bowl, combine all the spice mix ingredients and mix well.

For the masala paneer, add oil, salt, and the spice mix to the paneer. Mix well to coat the paneer with the spices.

In a pan, heat oil and add cumin seeds, bay leaf, and let them crackle. Add ginger, garlic, and sauté for a few seconds. Then add onions and sauté until golden. Add tomatoes, salt, sugar, and the spice mix. Cook and sauté for 2-3 minutes until the tomatoes become soft and mushy.

Transfer the mixture to a blender and grind it into a smooth puree.

In the same pan, melt butter and add the tomato puree along with fresh cream and kasuri methi. Mix well and let it simmer for a few minutes until the flavors meld together. Makhani sauce is ready.

For Pickle Chili:
Ingredients for Pickle Chili:
1/2 cup water
1/4 cup vinegar
1 tsp sugar
1 tsp salt
4-5 fresh green chili
Instructions:
In a bowl, combine water, vinegar, sugar, and salt. Mix well until the sugar and salt dissolve completely.

Cut the green chilies and add them to the vinegar mixture. You can use any variety of green chilies based on your preference.

Allow the green chilies to soak in the vinegar mixture for about 15 minutes to pickle and infuse the flavors.

After 15 minutes, your quick pickle chili is ready to be used as a condiment.

For garlic butter
1/4 cup butter
1 tsp red chili flakes
1 tbsp garlic crushed
1 tsp fresh coriander
Instructions:
In a bowl, combine softened butter, red chili flakes, crushed garlic, and fresh coriander. Mix well until all the ingredients are evenly incorporated.

To make tandoori paneer pide
Makhani sauce
Pizza Cheese
Process cheese
Masala paneer
Mushroom
Bell pepper
Onion

To make garlic cheese pide
Garlic butter
Mozzarella cheese
Processed cheese
Corn
pickle chili

- to make pide first dust the work surface with flour well otherwise it will stick now roll it into an ovel thin shape and size of your desire
Now to make tandoori paneer pide add process cheese to the side and tuck it now add makhani sauce and toppings of your choice and bake @ 200 c for 15 to 20 minute in pre heated oven
To make garlic cheese pide apply garlic butter and add cheese now roll the side and tuck the both parts and make a boat like shape now add corn and pickled chili and bake at the same temperature as above

For Garlic Yogurt Sauce:
Ingredients:
2 tbsp mayonnaise
2 tbsp thick curd
1 tsp garlic puree
Salt and pepper to taste
1 tsp lemon juice
1 tsp sugar
Instructions:
In a bowl, combine and whisk together mayonnaise, thick curd, garlic puree, salt, pepper, lemon juice, and sugar until well blended.
