FRUIT CAKE
* 300g mixed dried fruits( I used a mix of raisins, golden raisins, dried cranberries and cherries)
* 1 cup rum or brandy( use apple juice as an alternative)
* 1 stick butter (½ cup)
* 1 cup brown sugar (200g)
* ½ cup oil
* 3 tablespoons molasses or black treacle
* 2 tablespoons orange juice (20g)
* 3 eggs
* 1 tablespoon orange zest
* 1 teaspoon cinnamon
* ½ teaspoon all spice
* ½ teaspoon salt
* 1 teaspoon baking powder
* 1 ½ cup flour (200g)

BAKE AT 325°F/162°C FOR 90 MINUTES (Cover with foil after 60 minutes)
