*VEGAN COOKING* Mushroom-Bean-Chili with avocado and quinoa

Enjoy a nutritious meal with our Mushroom-Bean-Chili, served alongside creamy avocado and quinoa! Packed with mushrooms, beans, and spinach, this dish is rich in fiber and essential nutrients. Instructions:
Clean and chop mushrooms
Chop onion and garlic
Wash quinoa and put on to boil
Fry onions in olive oil until translucent
Add mushrooms
When mushrooms have reduced, add tomato paste, cumin, smoked paprika, oregano, coriander, pepper, broth, soy sauce and salt
Add drained beans, diced tomatoes and some water to cover
Let simmer for 10-20 mins
Add lemon juice and spinach
In the meantime, make quick guacamole
Finely chop fresh coriander
Dice up avocado, mix with coriander and lemon juice
Time to dish up!

- 2 tbsp tomato paste

- 1 tsp oregano
- 1 tsp coriander
- Salt
- Pepper
- Quinoa
