Hello guys! Interrupting the Hawaii series with a Sydney Vlog. (We have 2 more Hawaii Vlogs to go) Supreme Soy Sauce Noodles aka 豉油皇炒面 is something that I've always really enjoyed eating - I usually order when I go yum cha, or when I make congee or, just have it on it's own. But usually, even when i make congee, i end up ordering the chow mein from a restaurant because, I've just never been able to perfect it. Soy sauce noodles - sounds simple enough, but before there are so few ingredients, it means you gotta get every single element perfect - there's nothing to hide behind. I was super excited to film today's video because I got the opportunity to follow a chef with over 40 years experience, and learn how to make a good plate of supreme soy sauce noodles. And then, tried to make all this at home myself 😌

🍜 Recipe for Supreme Soy Sauce Noodles
Ingredients used -
220 g Hong Kong style Egg chow mein noodles
2 sprigs of Spring onions
¼ cup Chinese chives
½ cup bean sprouts
¼ Red onion
Sprinkle of toasted sesame seeds (optional)

Soy Sauce Noodle sauce mixture
¾ tablespoon Amoy light soy sauce
¾ tablespoon Amoy oyster sauce
¾ tablespoon Amoy dark soy sauce
½ teaspoon of sugar
½ teaspoon Amoy sesame oil

Instructions
1. Create noodle sauce mixture by mixing dark soy sauce, light soy sauce, oyster sauce, and sugar into a bowl. (Sesame oil is added at the end)
2. Cut the spring onions and chives into pieces around 3.5cm each and julienne the red onion.
3. Soak egg noodles in boiled water for 1 minute and during that time, use chopsticks to loosen the strands. Make sure to undercook the noodles as they will be stir fried later. Then, drain and allow noodles to dry.
4. While noodles are drying, heat up the wok and sauté the bean sprouts to get rid of any fishiness in the taste. Then, transfer to a bowl
5. Heat up the wok again and add egg noodles. Make sure the noodles are dry, and are slightly sticky to touch, before adding them into the wok. Cook noodles over medium heat and use tongs or chops to loosen the noodles.
6. Add red onions and bean sprouts to the wok and toss them with the noodles until well combined.
7. Add spring onions and gradually add in noodle sauce mixture while tossing the noodles with the vegetables. Continue to do so until all your sauce mixture has been added to the wok.
8. As a last step, add in chinese chives and sesame oil. Then a final toss the wok to ensure everything is well combined.
9. Transfer to a plate, and garnish with some toasted sesame seeds.
